To create Prosecco Bio, winemakers use Glera grapes and other white grapes (Chardonnay, Pinot Bianco, Pinot Grigio). The percentage of grapes varies from year to year. Glera is the dominant variety and its content in the blend is 85-100%. Vintage wine is harvested in vineyards with the classification of Bio. After transporting the crop to the winery, it is subjected to soft pressing using a pneumatic press, decantation at low temperature and subsequent fermentation in stainless steel tanks at controlled temperatures.
