Bodegas Tradición is the unique Jerez bodega to only bottle consistently genre-defining, very fully aged wines capable of pleasurably filling the senses. The wines receive no caramel, cooked-wine, fining, chill-filtration, cold stabilization, sulphites in the dry wines during maturation and bottling, nor blending between styles (Tradicion Cream excepted)...
In other words, the real thing, as it is backed up by many of the world's major wine critics. And like all the great wines, they are as splendid alone as they are with the right dishes, with food pairing potential way beyond a midwinter aperitif. The most important thing is to use ample glasses, such as Burgundy or Montrachet pattern, and enjoy.
Our newest Tradicion breaks our rules, as we blend in some flamboyant, youthfully fruity PX into our ancient dry, nutty Oloroso.
The flavour complexity from this improper marriage is outrageous, the texture quite seductive.
While making marvelous sipping, it also accompanies anything orange, cake, meats, seeds.
It is the perfect not-dry wine for those who only drink wines that are not sweet. Be assured, this is no ordinary cream. If a dairy metaphor were necessary, it is more a Brillat Savarin.

This is a new 2017 bottling of the NV Cream VOS, marked as L 1/17, the first bottling of 2017. This is a VOS with an average age of 20 years and some 120 grams of residual sugar, from the solera of Oloroso and the last criadera of PX. It's quite subtle and has aromas of peach and raisins and a balanced palate with the sugar quite integrated. Only 1,250 bottles were filled in May 2017.
