Produced from Pedro Ximenez grapes, partially dried 1 week before pressing and then a 5-6 year aging period in oak barrels of our traditional soleras, this rich dessert wine has an almost opaque black color with mahogany highlights. Its bouquet marries dried fruits (raisins, figs and prunes) with complex aromas of coffee, cocoa and fine wood. In the mouth, these elements combine into and intense yet elegant whole in which the sweetness, fruit and intensity of the wine are balanced by a long warm nutty finish. Delicious with desserts-- it marries superbly with chocolate -- served at room temperature, on its own lightly chilled. Or, for a sinful Spanish treat, leave a bottle in your freezer and pour over vanilla ice cream.

The sweet NV Pedro Ximénez Tomás García is a clear step up in complexity and character compared with the young and unoaked version. Bottled at five/six years average age, the time in the old solera barrels has added a layer of spices, dried fruits, ashes and tobacco leaves with some rusticity (tree bark, carob beans). The palate is sweet, but you wouldn't guess there's more than 430 grams of unfermented sugar per liter here! Sweet but not cloying. Up to 5,000 bottles filled per year.
